1. Mix 2 cups semolina, 1 cup curd, and 1 cup water; let it sit for 15 minutes.
2. In a pan, heat oil and add 1 tsp cumin seeds, 1 tsp mustard seeds, and 10-12 curry leaves.
3. Stir in 2 mashed potatoes.
4. Add 1 small grated beetroot, 1-2 finely chopped green chilies, salt, a pinch of asafoetida, 1/2 tsp black pepper powder, and 1 tsp chaat masala powder. Mix well.
5. Add 1 tbsp eno to the batter and activate with a little water.
6. Fill the idli mould halfway with batter.
